The aim of the activity was to explore the craft of authentic Italian gelato by engaging directly with Slow Food artisans. Through hands-on experimentation and guided discussions, students were invited to understand how tradition, quality ingredients, and local culture shape a product that is both simple and extraordinary.
We visited the Marchetti company, a renowned Piedmontese Slow Food producer, to take part in a gelato-making workshop. The gelatieri welcomed us into their workspace and shared the company’s story—its humble beginnings, its devotion to local ingredients, and its pursuit of genuine flavors. As we mixed, tasted, and observed, they revealed the quiet techniques that give Italian gelato its unmistakable character, turning the visit into a small voyage through taste, heritage, and craft.
