The goal of the activity was to teach erasmus students how to cook a typical Parmesan dish: tortelli di erbetta.
The activity consisted of a traditional Parmigian cooking workshop, during which Erasmus students had the opportunity to learn how to prepare one of the region’s most iconic dishes: tortelli d’erbetta.
The event opened with a presentation dedicated to Parma’s culinary heritage, featuring an in-depth look at the historic Violetta di Parma, its cultural significance, and its strong connection to local traditions. During this introduction, participants were also introduced to the Violetta Spritz, a cocktail inspired by the famous essence, which they prepared and enjoyed during the workshop.
Following the introductory session, the hands-on workshop began. Volunteers guided participants through each step of the process, demonstrating how to prepare the pasta dough, the filling, and the proper technique for shaping the tortelli. Once completed, the tortelli were cooked and shared in a convivial moment that allowed everyone to taste the results of their work and fully experience Parma’s authentic culinary tradition.
To organize the event, we prepared the introductory presentation, purchased all necessary ingredients, and reserved the kitchen within the youth center that hosted us. It was a collaborative and immersive experience designed to introduce participants to Parma through its most genuine and beloved flavors.
